Ingredients:

• 500 g- cod fish loin, cut into bite sized pieces
• 2 – green peppers, thinly sliced
• 115 g- button mushrooms, thinly sliced
• 1 – small onion, peeled and finely chopped
• 175 g – carrots, thinly sliced
• 650 g- peeled Potatoes
• 3 tbsp – Sunflower oil
• 1 tbsp- fresh parsley, chopped
• 100 g- cheddar cheese, grated
• 50 g- plain flour
• 1 cup – Milk

Method:

  1. Mix the grated cheese and flour in a saucepan and cook on a medium flame for the cheese sauce
  2. When the flour is brown add the milk and stir until the sauce thickens
  3. Now saute the onions until golden brown. Then add the carrots, mushrooms and peppers
  4. Now boil the potatoes for 15 – 20 mins and mash with a fork
  5. In an oven proof dish add half of the fried vegetables, then place the cod fish in a layer over this
  6. Add a layer of the boiled and mashed potatoes on it
  7. Then add the remaining vegetables on it. Layer this with the cheese sauce
  8. Add the salt and pepper on the top
  9. Preheat the oven to 190 C/ 375 F/ gas 5.
  10. Bake for 1 hour 30 mins until the top is a light golden colour
  11. Garnish with parsley
