
Ingredients:
• 200 g – fresh ginger, peeled
• 200 g – fresh turmeric, peeled
• 200 g – fresh peppercorn
• 15 Lemons
• 1 tbsp – salt
• Salt for marinating
Method:
- Slice ginger and turmeric into thin slivers.
- Put this in a glass jar, along with peppercorns.
- Sprinkle 1/4 cup salt, shake this well.
- Keep this for 36 hours, shaking the jar once or twice in between.
- After 36 houurs drain out the liquid and wash under running water.
- Dab out excess moisture in a cloth, fill this into a sterile jar.
- Add strained lemon juice, salt and shake.
- Shake this at least once or twice in a day.
- Pickle will tenderize in 3-4 days.
