Ingredients:

• 1 tsp- Ginger (finely chopped)
• 1 tsp- Garlic (finely chopped)
• 2 large Onions (chopped )
• 2 large eggs
• 1 Carrot, finely chopped
• 1 Green Pepper, chopped
• 1 tbsp- dark Soya Sauce
• 1/2 stick of Butter
• Salt and Pepper to taste
• 1 tbsp- Red Chilli powder
• 3 cups- Cooked Rice (jasmine Rice preferred)

Method:

  1. In a thick bottom pan, heat butter and add ginger garlic and onions. Saute until soft. Add carrot and green pepper and saute further.
  2. Break in eggs and cook scrambled with vegetables until golden brown.
  3. Fold in cooked rice with soy sauce, salt, chilli, powder and pepper.
  4. Fry the rice in the mixture for a few minutes. Serve hot.
