
Ingredients:
• Mutton – 1 kg
• Basmati Rice – 600 g
• Thick Curd – 2 cups
• Ghee or Oil – 1 cup
• Onion – 5, medium-sized
• Garam Masala – 2 tsp
• Cardamom – 6
• Lime – 4
• Cilantro – 2 bunches
• Mint – 1 bunch
• Green chillies – 6
• Ginger and Garlic paste – as per need
• Saffron – 1 pinch
• Chilli powder – 1 tsp
• Turmeric – as per need
• Salt to taste
Method:
- Wash and soak rice for few hours.
- Take a bowl.
- Soak mutton in the curd with onions, ginger-garlic paste, cardamom, turmeric, salt, red chilli powder, lemon juice, saffron, green chillies (cut them into small pieces), mint and cilantro leaves.
- Soak for 1 to 2 hours.
- Fry remaining onions till golden brown in oil or ghee.
- Set aside the remaining oil or ghee.
- Meanwhile, take 3 litres of water in a vessel and boil with a handful of salt and cardamom.
- When the water boils, add rice to it and cook the rice till only 1/4 done.
- Take the soaked mutton.
- Now, place the rice over the mutton and add the fried onions and saffron and garam masala powder.
- Pour oil or ghee over the rice.
- Again place rice and repeat the same process till all the rice has been used.
- Cover the vessel tightly and cook for about 10-15 mins on low heat.
- Serve hot.
