Ingredients:

• Mutton – 1 kg
• Basmati Rice – 600 g
• Thick Curd – 2 cups
• Ghee or Oil – 1 cup
• Onion – 5, medium-sized
• Garam Masala – 2 tsp
• Cardamom – 6
• Lime – 4
• Cilantro – 2 bunches
• Mint – 1 bunch
• Green chillies – 6
• Ginger and Garlic paste – as per need
• Saffron – 1 pinch
• Chilli powder – 1 tsp
• Turmeric – as per need
• Salt to taste

Method:

  1. Wash and soak rice for few hours.
  2. Take a bowl.
  3. Soak mutton in the curd with onions, ginger-garlic paste, cardamom, turmeric, salt, red chilli powder, lemon juice, saffron, green chillies (cut them into small pieces), mint and cilantro leaves.
  4. Soak for 1 to 2 hours.
  5. Fry remaining onions till golden brown in oil or ghee.
  6. Set aside the remaining oil or ghee.
  7. Meanwhile, take 3 litres of water in a vessel and boil with a handful of salt and cardamom.
  8. When the water boils, add rice to it and cook the rice till only 1/4 done.
  9. Take the soaked mutton.
  10. Now, place the rice over the mutton and add the fried onions and saffron and garam masala powder.
  11. Pour oil or ghee over the rice.
  12. Again place rice and repeat the same process till all the rice has been used.
  13. Cover the vessel tightly and cook for about 10-15 mins on low heat.
  14. Serve hot.
