Kothimiri Potato Skins is a fantastic dish. If you try this recipe at once, I assure you that this dish will become all-time favorite in your kids. In this dish potatoes are crisp on the outside and very creamy on the inside. These potatoes are stuffed with the filling of potato, cheese and butter mixture and topped with grated cheese. Ingredients

– 2 large potatoes
– ? cup grated processed cheddar cheese
– 4 tablespoons butter
– Salt to taste
– ? teaspoon freshly ground black pepper
– ? cup chopped coriander leaves

How To Make?

1. First of all, Scrub the potatoes and boil them in their jackets in a large pan until cooked.
2. When the potatoes are cooked remove them from the pan and let them cool until you can handle them.
3. Now, cut the potatoes into half lengthwise and scoop out the center using a spoon, leaving a thin wall of flesh.
4. Then place the scooped out potato in a bowl and add the cheese and butter.
5. Now, mash them using a potato masher.
6. After that season with salt and pepper.
7. When this mixture is ready pile it into potato shells and spread grated cheese on it.
8. Now, place this potato halves on a plate and microwave on high for a minute or until the cheese bubbles.
9. When it is done take it out from the microwave and place it on serving plate and garnish it with coriander leaves and serve.
