Ingredients:
• 6 round, tender medium-sized Brinjal
• Salt
• 1 tbsp – oil
• 1 tsp – Red Chilli powder
• 1/2 tsp – coriander powder
• 1/2 tsp – Ginger Garlic paste
• 1.5 tbsp – Corn flour
• 1 tbsp – coriander leaves, very finely chopped
• Garam masala, a pinch
• Turmeric powder, a pinch
Method:
- Cut brinjals into rounds (1/3 inch to 1/2 inch thickness)
- Drop them in salted water after cutting.
- Mix all the ingredients except oil, into a tight paste.
- Squeeze the brinjal pieces and coat them with masala mix.
- Keep aside for 15 mins.
- Arrange the brinjal pieces on a microwave safe plate; sprinkle oil over the pieces, cook under microwave on high for 1.5-2 mins.
- Turn them and cook on high for another 1.5-2 mins.
- Check and if necessary cook for another minute and remove.
- Allow some standing time and then serve as side dish or starter.
