Ingredients:

• 3 – large mangoes (2 pulped)
• 1 – large Lemon
• 2 tbsp – Olive oil
• 2 – Chicken breasts, boned, skinned and pounded flat
• 1 piece – Ginger
• 2 Cloves – garlic, minced
• 1 – large onion, sliced
• 1 – large red pepper, julienned
• 1 cup – Green peas
• 3 tbsp – soya sauce
• 1 tbsp – Corn starch
• 2 tbsp – water

Method:

  1. Grate the rind of the lemon. Set the peel aside. Squeeze out the juice of the lemon. Set the juice aside with the mango pulp.
  2. Cut the third mango into thin slices.
  3. Heat the olive oil in a large skillet and add the chicken breasts, ginger and garlic.
  4. Saute till the chicken is browned on both sides.
  5. Reduce heat, and add the onion, red pepper strips and green peas.
  6. Combine the juice and pulp, soya sauce and corn starch. Mix well and add to the skillet.
  7. Stir over medium heat till sauce thickens and coats the chicken and the vegetables.
  8. Add the mango slices.
  9. Serve at once on hot plates with basmati rice.
