Ingredients:

• 10-12 digestive light biscuits
• 2 tbsp – Butter
• Water as required
• 200 gms – homemade Paneer
• 175 gms – hung Curd
• 1 Mango
• 2 eggs
• 10 tbsp – Honey
• 3 tsp – gelatine
• 100 ml – beaten Cream
• melted chocolate

Method:

  1. Crush biscuits with a rolling pan.
  2. Mix with melted butter and 1.5 tbsp. water. Pat onto a pie dish. Freeze or chill.
  3. Take homemade paneer (made of skimmed milk) and hung curd.
  4. Liquidise until creamy.
  5. Add mango pieces. Liquidize. Set aide.
  6. Beat the egg yolks with honey until well mixed. Add the paneer and curd mixture.
  7. Melt gelatin in 75 ml. water. Heat over double boiler and add to the above.
  8. Whisk egg whites until stiff and add alternatively with 100 ml. beaten cream to the mango mixture.
  9. Fold gently and pour over biscuit base. Refrigerate.
  10. Once set, decorate with thin mango slices and drizzle with chocolate.
