Ingredients:
• 250 gms – Whole Wheat flour
• 250 gms – Plain flour
• 6 tbsp – Oil
• 4 tbsp – Yoghurt
• 1 tsp – Salt
• 1 tsp – Red Chilli powder
• For the masala:
• 1.5 tbsp – Sesame seeds (white)
• 1.5 tbsp – Sesame seeds (black)
• 1 tsp – Ajwain (carum seeds)
• 1 tbsp – Onion seeds
• 1 tsp – Asafoetida
• Oil for deep frying
Method:
- Dry roast the ingredients for masala in a pan on slow fire till it starts to emit an aroma.
- In a bowl, mix the whole wheat flour, plain flour, salt, red chilli powder and the roasted masala.
- Add oil and yoghurt and mix well.
- Add enough water to form a medium hard dough. Keep aside for 1 hour.
- Make balls, the size of walnuts. Keep aside for 30 mins.
- Roll out each ball to about 4/5″ diameter discs.
- Deep fry in hot oil. Once you lower the puris into oil, it will sink and then rise. At that time, swish oil on the top side of the puri.
- This will enable it to puff up well. Flip over and fry the other side as well.
