Ingredients:

• 2 Egg -yolks
• 1/2 tsp – salt
• 1 tsp- mustard
• 1 tsp -sugar
• 1/2 tsp – pepper powder
• 1.5 cups- salad oil
• 1 tbsp -lemon juice or white Vinegar

Method:

  1. Beat the egg yolks in a bowl until thick.
  2. Beat in the salt, pepper, mustard and sugar.
  3. Add the oil, drop by drop, whisking vigorously between each addition of oil so that it is absorbed completely before the next drop.
  4. As the mayonnaise becomes thick and shiny the oil may be added in a thin steam. Finally add the lemon juice or vinegar.
