
Ingredients:
• 1 cup – basmati Rice
• 1 cup – Sugar
• 6 cups – water approx.
• 1/2 cup – Ghee
• 2 to 3 – Cardamoms
• 8 to 10 – Pistachios
• 8 to 10 – Almonds
• 2 tbsp – Raisins
• Few drops – Saffron colour
Method:
- Wash and soak rice for 10 mins.
- Blanch almonds and pistas, cut into thin slivers.
- Put water to boil, add rice, cook till 3/4 done.
- It is done when grain gets mashed between fingers.
- Drain out all water. Cool in a large plate.
- Add sugar and mix gently with hands till well blended.
- Heat ghee. Add cardamom.
- Add rice, and toss gently with spatula.
- Dilute colour in 1/2 cup water, sprinkle over rice.
- When well mixed, cover and simmer till all moisture evaporates.
- Garnish with pistas and almonds.
- Serve hot.
