Ingredients:
• 4 cup – cooked Rice
• 1 cup – Methi leaves, chopped
• 1 cup – onion, thinly sliced
• ¾ cup – tomato, chopped
• 3 tbsp – Ghee or oil
• 3 Cloves
• 2 pieces Cinnamon
• 3 Cardamom
• 2 green chilies, slit
• 2 tsp – Ginger Garlic paste
• salt to taste
Method:
- Heat the ghee or oil in a kadai. Add cloves, cinnamon and cardamom.
- After few seconds, add green chilies and onion.
- Fry till onion is golden brown.
- Add ginger garlic paste and fry till fragrant.
- Add methi leaves and fry well.
- Add tomato and fry till it is reduced to a pulp.
- Add the cooked rice and salt.
- Mix well and leave covered on low heat for 2-3 minutes.
- Serve hot with a raitha.
