Ingredients:
• Cooked Rice – 1 cup
• Rotel chopped Tomatoes and Green chillies – 1 can
• Salsa – 2 tbsp
• Black beans – 1 can (Optional)
• Cumin seeds – 1 tsp
• Cilantro chopped fine – 1/4 cup
• Grated Cheese – 1/2 cup
• Salt to taste
Method:
- Preheat oven to 350 degrees F. Grease an ovenproof casserole.
- Mix all the ingredients except cheese and pour into the casserole.
- Make 2 portions of the grated cheese and add one portion to the casserole.
- Bake for 15 mins until the casserole is hot and bubbly.
- Top with the remaining grated cheese and let the cheese melt.
- Serve hot with some beans, corn chips and salsa on the side.
