Ingredients:

• 2 – large potatoes, peeled and diced
• 3-4 flakes – garlic, finely chopped
• 1.5 tsp – Red Chilli powder
• 2 tsp – Corn flour
• 1/2 tsp – salt
• 2-3 tsp – oil

Method:

  1. Sprinkle some water over the potatoes and cook in the microwave for 10 mins.
  2. Drain excess water and add all the other ingredients.
  3. Mix well and cook in the microwave for 10 mins, stopping once every 3 mins to turn the potatoes over to ensure the masala coats them well.
  4. Serve hot with fried rice.
