Ingredients:

• 3 cups – cooked Rice
• 2 cups – sliced fresh Mushrooms
• 1/2 cup – snipped Parsley
• 1/2 cup – chopped Onion
• 1 can – evaporated Milk
• 2 tbsp – s – Butter or margarine
• 85 g – package Cream cheese, softened
• 2 – eggs
• 1 tsp – salt

Method:

  1. In a skillet, cook mushrooms and onion in butter or margarine till onion is tender but not brown.
  2. Beat together eggs and cream cheese till smooth. Stir in milk.
  3. Stir in cooked rice, parsley, salt and cooked mushroom mixture.
  4. Turn mixture into a 10 x 6 x 2 inch baking dish.
  5. Bake, uncovered, in a 350 C oven for 40-45 mins, or till a knife inserted off-centre comes out clean.
  6. Let stand 10 mins before serving.
