Ingredients:
• 10 – small tender Brinjals
• 3/4 cup – Channa dal
• 1/4 cup – dhaniya
• 7 – Red Chillies
• 1/2 tsp – Methi seeds
• 1 tsp – Jeera
• 1 tsp – Turmeric powder
• 1/4 cup – til seeds
• 1/2 tsp – Hing
• Oil
• Salt to taste
Method:
- Fry all the mentioned ingredients except (brinjals) with 1 tsp of oil till it turns brown and a strong aroma arises.
- Grind it into a coarse powder with salt.
- Heat oil in a kadai.
- Now slit the brinjals and stuff this powder inside.
- Drop brinjals into kadai, place lid and cook on a low flame till the brinjals turn tender and loose colour.
- Remove the lid and keep stirring occasionally on low flame.
- Allow the brinjals to get evenly fried.
- Add the rest of the masala powder and fry till it turns brown.
- Serve hot with rice.
