Ingredients:
• 300 gms – Onions (sliced)
• 6 Green chillies (sliced lengthwise)
• 1 medium hybrid Tomato (sliced)
• 50 gms – groundnuts, (dry fried and powdered )
• 1 tsp – Jeera ( dry fried and powdered )
• 1 tbsp – Coriander leaves (chopped)
• 10 Curry leaves
• Pinch of Haldi
• 1 Red Chilli
• 2 tbsp – groundnut oil
• 5 Garlic (peeled and chopped)
• 1 tsp – Ginger (chopped)
Method:
- Heat oil and add mustard seeds, red chilli and curry leaves. Keep frying till the seeds splutter.
- Add onions, chillies, garlic and ginger. Keep frying till the onion becomes pink and soft.
- Add tomato and fry till it becomes mushy. Add haldi jeera powder, salt with 500ml water. Leave the water to boil.
- Reduce heat, add groundnut powder and stir continuously to avoid lump formation. If the gravy is thick, you can add more water (hot water only) so it turns into sauce.
- Sprinkle chopped coriander, mix and remove.
- Serve with chapatti or poori. You can also use as bread spread. They can be served for people suffering from diabetics too.
