Ingredients:
• Rawa and Maida mix – 1 cup (to knead the gujiya dough)
• Palak puree – 1/4 cup (steamed and blender used Palak)
• Grated fresh Coconut – 1/2 cup
• Jaggery – 1/4 cup
• Cardomom powder – 1/4 tsp
• White Til/ Sesame seeds to sprinkle
• Oil or Ghee to fry
Method:
- Knead the gujiya dough with rawa maida combination and Palak puree.
- Add 1 tsp oil n a pinch of salt while kneading.
- Take a deep bottom pan and roast the coconut till light brown.
- Then add grated jaggery and cook till it forms a mass.
- Roll out the gujiya cover like a puri and stuff 1 tsp of the coconut mixture.
- Cover and shape it like a crescent moon or a normal gujiya.
- Sprinkle some til and deep fry.
- Palak a store house for iron and fibre. Coconut rich in omega fatty acids and Gujiyas made so healthy are ideal for all the age groups.
