Ingredients:
• 1/4 kg – Potato
• 100 g – Cauliflower
• 1 carrot, medium size
• 8 to 10 French beans
• 1/4 cup – grated Coconut
• 3 to 4 Red Chillies
• 2 tbsp – Green peas
• 1/2 tsp – Turmeric powder
• 2 tsp – Coriander seeds
• 2 tbsp – coriander leaves, chopped
• 1/2 cup – onion, finely chopped
• 2 pieces Cinnamon
• 4 Cloves Garlic
• 2 cm Ginger
• salt to taste
• 2 tbsp – oil
• 2 Cloves
Method:
- Peel and cut the potato into 1 cm cubes.
- Dice the carrot and beans.
- Cut cauliflower into small pieces.
- Combine all these and peas together.
- Add turmeric powder, salt and some water. Cook till soft.
- Dry roast all the ingredients from chillies to cinnamon and powder.
- Grind coconut with ginger, garlic and coriander leaves to a smooth paste.
- Mix the ground paste with the powdered ingredients.
- Heat the oil and fry onion till light brown.
- Add the prepared Masala and 1 cup of water. Simmer for 5 minutes.
- Add the cooked vegetables and simmer for 5 more minutes (the consistency should be slightly thicker than Sambar).
- Serve hot with Poori or Chapatti.
