
Ingredients:
• Potatoes – 1/2 kg
• Coconut – 1 medium sized
• Green chillies – 8, slit
• Onion – 1/2 cup, chopped
• Ginger – 1 tsp, minced
• Salt to taste
Method:
- Boil, peel and lightly crush the potatoes.
- Grate the coconut and extract 1 cup thick milk and 2 cups of thin milk.
- Combine green chillies, onion and ginger with thin milk.
- Heat until boiled, reduce the flame and simmer for 3-4 mins.
- Add potatoes and salt, simmer for 2 more mins.
- Add the thick coconut milk and just as it begins to boil, switch off the flame and serve.
