Ingredients:
• ¼ kg – small Brinjals
• 1 tsp – ginger-garlic paste
• 1 cup – onions, chopped
• 1 tbsp – sesame seeds
• 1 tbsp – grated Coconut
• 1 tbsp – roasted groundnuts
• 1/2 tsp – Turmeric powder
• 1/2 tsp – coriander powder
• 1/2 tsp – cumin powder
• 1/2 tsp – Garam Masala
• 1 tsp – Tamarind
• Red Chilli powder to taste
• Salt to taste
• 4 tbsp – oil
Method:
- Slit brinjals from both the sides without cutting the vegetable completely.
- Soak tamarind in 2 cups of water for half an hour.
- For the gravy, make a smooth paste of sesame seeds, roasted peanuts and grated coconut.
- Fry the brinjals in 2 tbsp of oil until they become soft and keep it aside.
- Pour the rest of the oil in the pan and heat it.
- Add ginger-garlic paste and chopped onions and fry until the onions turn light brown.
- Add the masala paste.
- Fry for a minute while stirring continuously.
- Add turmeric powder, cumin powder, coriander powder and red chilli powder and mix well.
- Add the tamarind juice and salt according to taste.
- Add fried brinjals and cover the pan and cook on a medium flame until the brinjals are completely cooked.
- Add chopped coriander and serve hot.
