Ingredients:
• Red Beans – 1 cup
• Onion – 1 large
• Garlic – 1 bulb
• Ginger – 2 inch root
• Pepper Powder – 1 tsp
• Turmeric – ¼ tsp
• Salt – to taste
• Water – 300 – 500 ml
• Coconut Oil – 1 tbsp
• Curry leaves – 2 sprigs
Method:
- Wash and pressure cook chori beans with salt, turmeric, pepper powder and water till 1 whistle on high heat, reduce flame and simmer for 30 minutes.
- Slice the onion.
- Peel, clean, slice in small pieces and crush ginger and garlic.
- Heat oil in a non-stick fry pan.
- Add the crushed ginger, garlic and curry leaves, sauté for about 3-4 mins till the flavours of the ginger/garlic/curry leaves get incorporated into the oil.
- Add onion and sauté till it is translucent.
- Add the cooked chori beans to this pan and stir fry for 2-3 minutes and it is ready to be served.
- Best served with rice gruel and `Chuttaracha Chammanthi`.
