Ingredients:

• Red Beans – 1 cup
• Onion – 1 large
• Garlic – 1 bulb
• Ginger – 2 inch root
• Pepper Powder – 1 tsp
• Turmeric – ¼ tsp
• Salt – to taste
• Water – 300 – 500 ml
• Coconut Oil – 1 tbsp
• Curry leaves – 2 sprigs

Method:

  1. Wash and pressure cook chori beans with salt, turmeric, pepper powder and water till 1 whistle on high heat, reduce flame and simmer for 30 minutes.
  2. Slice the onion.
  3. Peel, clean, slice in small pieces and crush ginger and garlic.
  4. Heat oil in a non-stick fry pan.
  5. Add the crushed ginger, garlic and curry leaves, sauté for about 3-4 mins till the flavours of the ginger/garlic/curry leaves get incorporated into the oil.
  6. Add onion and sauté till it is translucent.
  7. Add the cooked chori beans to this pan and stir fry for 2-3 minutes and it is ready to be served.
  8. Best served with rice gruel and `Chuttaracha Chammanthi`.
