Ingredients:
• 2 – medium-sized Ridge gourd
• 1 – Onion
• 1 lb – Prawns
• 1/2 tsp – Red Chilli powder
• 1/2 tsp- dhaniya powder
• 1/4 tsp – Turmeric powder
• 4-5 tsp – Coconut paste/milk
• 1-2 tsp – oil
• salt
• For seasoning:
• 1 tsp – mustard
• 1 tsp – Urad Dal
• Curry leaves
Method:
- Peel the ridge gourd and cut it into small pieces.
- Pressure cook it for about a whistle with 1/2 cup of water. You can also microwave it.
- Wash the prawns thoroughly, add some turmeric and salt to it and keep it aside.
- Heat the oil in a pan, add mustard seeds and urad dal. After the mustard pops, add the onions to it and fry it till becomes soft and translucent.
- Now wash the prawns once again with water and dry it well to drain all the water.
- Add it to the onions and fry well till the aroma is released.
- Now add the cooked ridge gourd, chilli powder, dhaniya powder, salt, 1/2 cup of water. Stir well and close it with a lid.
- Open the lid after 3 minutes and add the coconut milk to it. Stir it well for about 5 minutes and turn off the stove.
- Garnish with coriander Leaves and serve it with hot rice or chapattis.
