Ingredients:

• 1 kg – pork, with its fat and lard cut into medium pieces
• 3 big – onions, sliced finely
• 3 big – Tomatoes pureed
• 1 tbsp – Cumins powder
• 2 tbsp – coriander powder
• 1/2 tsp – Turmeric powder
• 1 tsp – Mustard Seeds
• 3 tsp – chilli powder
• 8 or 10 – Curry leaves
• 3 tbsp – Ginger Garlic paste
• 3 tbsp – oil
• salt
• To powder:
• 3 Cardamoms
• 3 Cloves
• 2 sticks of Cinnamon
• 2 tsp of aniseeds or Saunf

Method:

  1. Heat oil in a pressure cooker and add the mustard seeds to it.
  2. When they begin to crackle, add the curry leaves and onions and fry it till they are golden brown in colour.
  3. Add the chilli powder, cumin powder, turmeric powder, coriander powder, powdered spices, ginger-garlic paste to it and fry for some time.
  4. Add the pork, salt, tomato puree to it and keep frying it for some time.
  5. Add sufficient water and pressure cook it for about 20 mins on high heat till the pork is cooked.
