
Ingredients:
• 1 kg – pork, with its fat and lard cut into medium pieces
• 3 big – onions, sliced finely
• 3 big – Tomatoes pureed
• 1 tbsp – Cumins powder
• 2 tbsp – coriander powder
• 1/2 tsp – Turmeric powder
• 1 tsp – Mustard Seeds
• 3 tsp – chilli powder
• 8 or 10 – Curry leaves
• 3 tbsp – Ginger Garlic paste
• 3 tbsp – oil
• salt
• To powder:
• 3 Cardamoms
• 3 Cloves
• 2 sticks of Cinnamon
• 2 tsp of aniseeds or Saunf
Method:
- Heat oil in a pressure cooker and add the mustard seeds to it.
- When they begin to crackle, add the curry leaves and onions and fry it till they are golden brown in colour.
- Add the chilli powder, cumin powder, turmeric powder, coriander powder, powdered spices, ginger-garlic paste to it and fry for some time.
- Add the pork, salt, tomato puree to it and keep frying it for some time.
- Add sufficient water and pressure cook it for about 20 mins on high heat till the pork is cooked.
