Ingredients:
• 400 gms – purple Yam (kanda in telugu), peel and rub with some salt, cut into 1 to 1.5-inch pieces
• 2 medium-size onions, cut into small pieces
• 2 green chillies, cut into pieces
• salt
• 1 tbsp – coriander powder (dry fried and powdered)
• 6-8 Cloves garlic, peeled and crushed
• 2 tbsp – oil
• 10 Curry leaves
• 1 tbsp – chopped, coriander
• 1/2 tbsp – Red Chilli powder
• 1/8 tsp – Turmeric powder
Method:
- Heat oil in a cooker. Add onion, green chillies, turmeric powder and curry leaves.
- Fry till onion becomes soft and pink.
- Add yam and fry for 2 mins. Then add red chilli powder, salt and fry for a minute.
- Add 300 ml water, stir well and pressure cook up to 3 whistles.
- Let cooker cool, remove lid and return to the fire. Add coriander powder, crushed garlic, cover and simmer for 2 mins.
- Sprinkle chopped coriander, mix once and serve.
