Ingredients:

• 2 cups – Spinach leaves (chopped)
• 1 cup – Thick Coconut Milk
• 1/2 cup – Water
• 6- Garlic Cloves
• 1 tsp – Mustard seeds+urad dal or Vadagam
• 3- Dry red chillies(broken)
• Salt to taste
• 1 tbsp – Coconut Oil.

Method:

  1. Boil the coconut milk and water then add the spinach leaves and cook on a medium flame until the leaves are tender.
  2. Meanwhile crush the garlic cloves and keep aside.
  3. Then heat the coconut oil in a pan and splutter the mustard seeds, add the urad dal, the dry red chillies and fry until brown. Now add the crushed garlic and fry for a few minutes. Remove from fire.
  4. Now blend the cooked spinach leaves with the tempered spices and garlic and salt in a mixer.
  5. Serve with rice and any side dish.
