
Ingredients:
• 3-4 – medium-sized apples (pared, cored and diced)
• 1 cup – pitted Dates (chopped coarsely)
• 1/2 cup – Walnuts
• 1/4 cup – flour
• 1.25 tsp – baking powder
• 1.5 tsp – soda bicarb (sift ingredients till now 3 times)
• 1 cup – Sugar
• 1 tsp – Cinnamon (ground)
• 1/4 tsp – Nutmeg (ground)
• 1/4 tsp – Cloves (ground)
• 3 – eggs
• 1/4 cup – oil
• Honey Custard: 1.5 cups – Milk
• 2 tbsp – custard powder
• 2 tbsp – Honey
Method:
- Combine apples, dates, walnuts, flour, sugar and ground spices well.
- Beat eggs and oil until well blended.
- Pour over the above mixture. Turn the mixture into well-greased mould.
- Cover with a greased aluminium foil.
- Place mould on a wire rack in a large pan.
- Pour in boiling hot water (half the height of the mould).
- Cover tightly and cook on gentle heat for 2 hours.
- Add some more boiling water if required.
- For custard:
- Blend custard powder and melted honey with nuts.
- Cook on medium heat. Keep stirring till it thickens.
- Serve with steamed pudding.
