Ingredients:
• 1 cup – Butter
• 1.5 cups – Breadcrumbs
• Pinch of salt
• 3 – eggs
• 2 cups – Chopped Dates
• 1/2 cup – Milk
• Grated rind of one Lemon
• 1 tsp – Grated Nutmeg
Method:
- Beat butter and sugar until light and creamy, add one egg at a time and beat well, add rind, nutmeg and salt, then fold in breadcrumbs and dates alternatively with milk.
- Make the mixture to a dropping consistency so add a little milk if necessary.
- Pour into a well greased mould and put the mould in a pan of hot water and steam the pudding for 2 hours, or until it is cooked.
- A skewer inserted in the centre should come out clean.
- When the pudding is done invert it on a platter and serve hot with cream or custard sauce.
