
Ingredients:
• 1 can – Suran (Yam)
• 1 tbsp – Tamarind paste
• salt
• 1 tbsp -garam masala
• 3 – Tomatoes (finely chopped)
• 1 – large Onion (chopped)
• 2 tbsp – cooking oil
• 3 – Garlic Cloves (chopped)
• 1/2 tbsp- Ginger paste
• 2 tbsp – Curd
Method:
- Boil suran (yam) in water with tamarind (do not boil too much, just enough for the suran to be semi hard).
- Fry or saute them in about two tbsp oil. Take them out before they start turning too brown.
- In a heavy-bottom pan, add the oil, finely chopped onions, ginger, garlic, finely chopped tomatoes and fry till the oil separates.
- Add the suran pieces to this masala and add 2 tbsp of curd.
- Cook and stir for about 5 mins, then serve hot. Goes well with hot puris or parathas.
