
Ingredients:
• Onion – 1 small one chopped into cubes
• Oil – 2 tbsps
• Prawns – 200 g
• Lime leaves – 4
• Lemon grass – 3 sticks
• Chicken stock or fish stock- 2 cups
• Tomatoes – 1 small cut into cubes
• Lemon juice- 5 tbsps
• Soya sauce – 2 tbsps
• Fish sauce – 2 tbsps
• Chilli paste – 2 tsps
• Coriander leaves for garnishing
• Mushrooms -5 cut lengthwise
• Sugar- 1 tbsp
Method:
- Heat oil in a pan and add onions. Saute till transparent.
- Add the chicken stock.
- When it starts to boil. Add lemon grass, ginger and prawns.
- Make a paste of fish sauce, soya sauce and chilli paste. Add it to the chicken stock.
- Cook for 5 mins and add the mushrooms, lime juice and sugar one after the other.
- When prawns are done, add tomatoes and garnish with finely minced coriander.
