Ingredients:
• 1 cup – tomato, finely chopped
• 4 – green chillies, slit
• 2 tbsp – Lime juice
• 2 tbsp – coriander leaves, chopped
• 2 tbsp – Ghee or oil
• 2 tsp – garlic, chopped and crushed
• 1 tsp – mustard
• 1/2 tsp – Cumin seeds
• 1/2 tsp – pepper, crushed
• 1 tbsp – jaggery, powdered
• few Curry leaves
• salt to taste
Method:
- Heat the ghee or oil in a thick pan. Add mustard and cumin.
- When they splutter, add garlic and pepper. Fry till the garlic turns golden brown.
- Add tomato and fry stirring and crushing, till it is reduced to a thick pulp.
- Add 6 cups of water, green chillies, curry leaves, salt and jaggery.
- When it begins to boil, reduce the heat and simmer for 5 mins.
- Remove from heat. Add lime juice and coriander leaves. Serve hot.
