Ingredients:

• 1 cup – tomato, finely chopped
• 4 – green chillies, slit
• 2 tbsp – Lime juice
• 2 tbsp – coriander leaves, chopped
• 2 tbsp – Ghee or oil
• 2 tsp – garlic, chopped and crushed
• 1 tsp – mustard
• 1/2 tsp – Cumin seeds
• 1/2 tsp – pepper, crushed
• 1 tbsp – jaggery, powdered
• few Curry leaves
• salt to taste

Method:

  1. Heat the ghee or oil in a thick pan. Add mustard and cumin.
  2. When they splutter, add garlic and pepper. Fry till the garlic turns golden brown.
  3. Add tomato and fry stirring and crushing, till it is reduced to a thick pulp.
  4. Add 6 cups of water, green chillies, curry leaves, salt and jaggery.
  5. When it begins to boil, reduce the heat and simmer for 5 mins.
  6. Remove from heat. Add lime juice and coriander leaves. Serve hot.
