Ingredients:
• 1 – Lemon-sized piece of Tamarind
• 1/2 tsp. – Fenugreek seeds
• 1 sprig – Curry leaves
• 1 tsp. – Sambhar powder
• Mixed vegetables like red pumpkin, drumsticks, ladyfinger or Eggplant
• 2 tsps – Sesame oil
• 1/2 tsp – Mustard Seeds
• 3 – Dry Red Chillies
• 1 small piece – Asafoetida
• 1/2 tsp – Turmeric powder
• 1 tsp – Jaggery
Method:
- Soak tamarind in some water.
- After 10 minutes, extract the juice and keep aside.
- Heat oil in a kadai. Add mustard seeds and let it splutter.
- Add curry leaves, asafoetida and fenugreek seeds.
- Lower flame, add sambhar powder and turmeric powder.
- Now add the tamarind juice.
- Allow the water to boil for 10 minutes before you add the chopped vegetables.
- Now boil until all the vegetables are cooked.
- In the end, add jaggery.
- Stir well.
- Your vatta kolambhu is ready.
