Ingredients:

• 1 – Lemon-sized piece of Tamarind
• 1/2 tsp. – Fenugreek seeds
• 1 sprig – Curry leaves
• 1 tsp. – Sambhar powder
• Mixed vegetables like red pumpkin, drumsticks, ladyfinger or Eggplant
• 2 tsps – Sesame oil
• 1/2 tsp – Mustard Seeds
• 3 – Dry Red Chillies
• 1 small piece – Asafoetida
• 1/2 tsp – Turmeric powder
• 1 tsp – Jaggery

Method:

  1. Soak tamarind in some water.
  2. After 10 minutes, extract the juice and keep aside.
  3. Heat oil in a kadai. Add mustard seeds and let it splutter.
  4. Add curry leaves, asafoetida and fenugreek seeds.
  5. Lower flame, add sambhar powder and turmeric powder.
  6. Now add the tamarind juice.
  7. Allow the water to boil for 10 minutes before you add the chopped vegetables.
  8. Now boil until all the vegetables are cooked.
  9. In the end, add jaggery.
  10. Stir well.
  11. Your vatta kolambhu is ready.
