
Ingredients:
• 1 cup – long grained Rice
• 1/2 cup – shelled Green peas
• 6 – Shallots
• 1 – small Leek
• 1 – Carrot
• 2 – Capsicums
• 1 – big Onion
• 1 stick – Celery
• 1 – Bamboo shoot
• 1 tbsp – Bean sprouts
• 1 tbsp – chilli sauce
• 3 tbsp – groundnut oil
• 1 tbsp – soya sauce
• 1 tbsp – Tomato sauce
• Salt to taste
Method:
- Chop shallots along with leaves, celery, leeks, carrots, bamboo shoots and capsicums into thin long strips. Slice the onions.
- Heat a little oil, saute the onions and shallots.
- Add leeks, celery and saute.
- Add vegetables and shallow fry a little. Add salt, soya and chilli sauce.
- Fry well. Keep aside for 10 minutes.
- In the meantime, heat oil in another pan and fry washed rice for 5 mins till all the grains are covered with oil.
- Transfer rice to another container and add 1.5 cups of water. Transfer this to a pressure cooker (for 6.5, 7.5, 10 and 12 litres pressure cookers use 2 cups of water) and cook the rice for 8 mins.
- Add fried vegetables and tomato sauce to the cooked rice and mix well.
- Garnish with a sprinkling of pepper (black) and a little vinegar. Best eaten with soups.
- Serve hot.
