Ingredients:

• 250 gms – liquefied Watermelon pulp
• 250 ml – water
• 125 ml – Sugar
• 2 tsbp – crushed china grass
• 1 tsp – Lime juice
• 1/4 tsp – fresh Mint leaves, finely chopped

Method:

  1. Soak china grass in 50 ml. or 1/2 cup water for 10 minutes.
  2. Bring to a boil till fully dissolved, stirring continuously.
  3. Bring remaining water to boil in a deep vessel.
  4. Add sugar, stirring to dissolve sugar completely.
  5. Strain china grass mixture into sugar solution.
  6. Cool to room temperature.
  7. Mix in liquefied pulp and lime juice.
  8. Blend very briefly to evenly mix china grass only if required.
  9. Do not allow to froth.
  10. Add mint leaves and stir.
  11. Pour into ice cube trays and set till firmly frozen.
