Ingredients:

• 3 Potatoes
• 3 Onions
• 3 Capsicums
• 2 tbsp – grated fresh Coconut
• 1 tsp – Red Chilli powder
• ¾ tsp – Mustard Seeds
• 1 tsp – Cumin seed powder
• 1 tsp – coriander powder
• 3 tbsp – oil
• ½ tsp – Sugar
• ¼ tsp – Turmeric
• salt to taste

Method:

  1. Cut the onions, potatoes and green peppers into thin, lengthwise strips.
  2. Heat the oil in a wok. When hot, pop in the mustard seeds and turmeric.
  3. Add the onion and saute till golden brown.
  4. Then add the potato and green pepper and stir fry (10-15 minutes) till cooked. Stir constantly.
  5. Complete the dish by stirring in the coriander, cumin seed and red chilli powder, grated coconut, sugar and salt.
  6. Serve hot.
