Ingredients:

• 200 g – all-purpose flour
• 115 g – Butter
• 1/2 cup – powdered Sugar
• 1/2 cup – Brown sugar
• 1 tsp – baking powder
• 1/2 tsp – baking soda
• 2 tbsp – Honey
• 2 tbsp – Lemon zest
• 1 tsp – fresh Lemon juice
• 1 tbsp – ground Ginger
• 1/2 tsp – Cardamom

Method:

  1. Preheat oven to 180 degrees centigrade.
  2. Add the flour, baking powder, ginger, baking soda and mix until well combined.
  3. Cream the butter together with the sugar and honey until light and fluffy.
  4. Grate in the lemon zest and finely chop the ginger and add to the bowl along with the lemon juice and ground ginger.
  5. Add the flour and beat together until everything incorporated.
  6. Knead to a smooth dough.
  7. Flatten, slightly and place on the baking tray.
  8. Bake in the oven for 12-14 mins until they are golden brown in colour.
  9. Cool and store in an airtight container.
