
Ingredients:
• 200 g – all-purpose flour
• 115 g – Butter
• 1/2 cup – powdered Sugar
• 1/2 cup – Brown sugar
• 1 tsp – baking powder
• 1/2 tsp – baking soda
• 2 tbsp – Honey
• 2 tbsp – Lemon zest
• 1 tsp – fresh Lemon juice
• 1 tbsp – ground Ginger
• 1/2 tsp – Cardamom
Method:
- Preheat oven to 180 degrees centigrade.
- Add the flour, baking powder, ginger, baking soda and mix until well combined.
- Cream the butter together with the sugar and honey until light and fluffy.
- Grate in the lemon zest and finely chop the ginger and add to the bowl along with the lemon juice and ground ginger.
- Add the flour and beat together until everything incorporated.
- Knead to a smooth dough.
- Flatten, slightly and place on the baking tray.
- Bake in the oven for 12-14 mins until they are golden brown in colour.
- Cool and store in an airtight container.
