Ingredients:

• 1/2 cup – whole Wheat pastry flour
• 1 cup – brown Rice flour
• 1/2 cup – all-purpose flour
• 1/2 cup – rolled oats
• 1/2 cup – cornmeal
• 2 tbsp – Corn starch
• 1/4 cup – Ragi flour
• 3/4 cup – Butter
• 200 g – dark chocolate bar
• 1/2 cup – brown packed Sugar
• 1/2 cup – Sugar
• 2 – bananas, pureed
• 1 cup – Greek yogurt
• 1 tbsp – Flax seed meal +3 tbsp – water
• 1 tbsp – baking powder
• 1 cup – water

Method:

  1. Preheat the oven to 300F.
  2. Blend together whole wheat pastry flour, brown rice flour, cornmeal, all-purpose flour, rolled oats, cornstarch, ragi flour, baking powder in a bowl and keep it aside.
  3. Melt the chocolate in microwave oven for 5 minutes in high with a cup of water and turn it to a thin chocolate sauce.
  4. Beat the butter with sugar and brown packed sugar until they turns soft and creamy.
  5. Add the Greek yogurt and banana puree to the creamy butter mixture and beat until they turn soft.
  6. Make a paste with flaxseed meal and water, add this flaxseed meal paste to the butter-puree mixture and gradually add the chocolate sauce, beat for a while.
  7. Finally add the dry ingredients, mix slowly with spatula.
  8. Pour the cake batter to the greased mould and bake for 35-40 minutes.
