Ingredients:

• 3 cups Rice Flour
• 1 can Coconut Milk
• 1 tsp Dry yeast
• 1 tbsp Sugar
• 3 cups Water
• Salt to taste

Method:

  1. Warm up 2 tbsp of water, add sugar and mix in the yeast.
  2. In a bowl, mix together the flour and coconut milk and make it into a paste. Make sure there are no lumps.
  3. Gradually, add water and make a thin batter (like the consistency of dosa batter).
  4. Add the dissolved yeast and salt and mix thoroughly.
  5. Allow the batter to ferment for 6-8 hours.
  6. When the batter has risen, it’s ready to use.
  7. Heat a non-stick tawa.
  8. Pour in 1 ladle of batter, lift the tawa and rotate it slowly once so that the batter spreads evenly.
  9. Cover and let it cook in the steam for 1 minute.
  10. Remove the appam using a spatula when done.
  11. Serve hot with a spicy side dish (korma).
