
Ingredients:
• 3 cups Rice Flour
• 1 can Coconut Milk
• 1 tsp Dry yeast
• 1 tbsp Sugar
• 3 cups Water
• Salt to taste
Method:
- Warm up 2 tbsp of water, add sugar and mix in the yeast.
- In a bowl, mix together the flour and coconut milk and make it into a paste. Make sure there are no lumps.
- Gradually, add water and make a thin batter (like the consistency of dosa batter).
- Add the dissolved yeast and salt and mix thoroughly.
- Allow the batter to ferment for 6-8 hours.
- When the batter has risen, it’s ready to use.
- Heat a non-stick tawa.
- Pour in 1 ladle of batter, lift the tawa and rotate it slowly once so that the batter spreads evenly.
- Cover and let it cook in the steam for 1 minute.
- Remove the appam using a spatula when done.
- Serve hot with a spicy side dish (korma).
