Ingredients:

• 4 cup – cooked Rice
• 1 cup – Methi leaves, chopped
• 1 cup – onion, thinly sliced
• ¾ cup – tomato, chopped
• 3 tbsp – Ghee or oil
• 3 Cloves
• 2 pieces Cinnamon
• 3 Cardamom
• 2 green chilies, slit
• 2 tsp – Ginger Garlic paste
• salt to taste

Method:

  1. Heat the ghee or oil in a kadai. Add cloves, cinnamon and cardamom.
  2. After few seconds, add green chilies and onion.
  3. Fry till onion is golden brown.
  4. Add ginger garlic paste and fry till fragrant.
  5. Add methi leaves and fry well.
  6. Add tomato and fry till it is reduced to a pulp.
  7. Add the cooked rice and salt.
  8. Mix well and leave covered on low heat for 2-3 minutes.
  9. Serve hot with a raitha.
