Ingredients:
• 25 – Mint leaves, chopped finely
• 1 cup – brown Rice flour
• 3 tbsp – all-purpose flour
• 1/2 cup – rolled oats
• 1 tsp – Flax seed powder + 3 tsp water
• 3 tbsp – Olive oil
• 1 tbsp – black sesame seeds
• 1/2 tsp – baking soda
• 1 tsp – baking powder
• Salt
Method:
- Preheat the oven to 350 degree F
- Mix the flax seed powder with water to a paste, add chopped mint leaves, brown rice flour, all-purpose flour, rolled oats, black sesame seeds, baking soda, baking powder and salt in a large bowl.
- Add the flax seed paste and olive oil and mix the dry ingredients to a crumble like texture.
- Now add water and mix to a soft but stiff dough
- Roll the dough with rolling pin, using the cookie cutter, cut the dough into desired shapes.
- Arrange shaped dough on the baking sheet and bake for 15-20 mins in middle rack
