Ingredients:

• 3 kg – boneless leg of lamb
• 7 to 8 – Garlic cloves, minced
• 1/4 tsp – minced Ginger
• 2 tbsp – minced Onion
• 1/2 tsp – Oregano
• 1/2 tsp – pepper
• Salt as per taste
• 2 tbsp – Cumin seeds powder
• 2 tbsp – Coriander seeds powder
• 1/2 tsp – Red Chilli powder
• 1/4 tsp Turmeric powder
• 1/2 tsp – Garam Masala
• 1/2 cup – Olive oil
• 1 tbsp – Vinegar
• 1 tbsp – Lemon juice

Method:

  1. Cut into the leg of lamb in a criss-cross manner. Mix all the ingredients
  2. Marinate the meat with the above mixture.
  3. Refrigerate for 10 hours.
  4. Preheat the oven at 450 F.
  5. Place the meat in the oven
  6. Reduce the oven to 325 F.
  7. Let the lamb bake for 2.5-3 hours till it is tender, basting often with the sauce in baking dish.
  8. Serve with crunchy salad.
