Ingredients:

• 500 g – Icing Sugar
• 300 g – Almonds
• 2 tbsp – Lime juice
• 1 – Egg yolk
• 1 tsp – Almond essence
• 1/2 cup – Water
• 1- Cake.

Method:

  1. Soak the almonds overnight in water then grind into a thick paste.
  2. Add the Icing sugar, egg yolk, almond essence and lime juice.
  3. Now cook with a little water in a heavy bottomed pan until it solidifies.
  4. Remove from heat and cool.
  5. Knead it into a stiff ball.
  6. Roll out to fit the cake, then spread a little egg white all over the icing.
  7. Spread a thin layer of jam on the cake to keep the icing in place.
  8. Place the layer of Almond icing over the cake
  9. And press gently with a spatula so that the entire cake is covered with the icing.
  10. Let it set for 2 days.
