Ingredients:
• 12 – baby Corns
• 1 – Onion (chopped)
• 2 – Tomatoes (chopped)
• 1/2 – Capsicum (cubed)
• 2 – Green chillies
• 3/4 tsp – Red Chilli powder
• 2 tbsp – Coriander leaves
• 1/8 tsp – Turmeric powder
• salt and water as needed
• To temper: 1 tbsp – oil
• 1 tsp – cumin
Method:
- Cut the baby corns to your desired shape and boil with salt and turmeric powder.
- Heat a pan with oil and temper with the cumin seeds.
- Add onion and green chillies and fry until transparent.
- Add the cooked baby corns and red chilli powder and cook for 2-3 minutes.
- Add the tomatoes and capsicum and fry for 2-3 minutes on medium flame.
- Top with coriander leaves and drizzle some ghee if you want.
- Fry for a minute and transfer to a serving bowl.
- Serve as accompaniment for rice or roti.
