Ingredients:

• 12 – baby Corns
• 1 – Onion (chopped)
• 2 – Tomatoes (chopped)
• 1/2 – Capsicum (cubed)
• 2 – Green chillies
• 3/4 tsp – Red Chilli powder
• 2 tbsp – Coriander leaves
• 1/8 tsp – Turmeric powder
• salt and water as needed
• To temper: 1 tbsp – oil
• 1 tsp – cumin

Method:

  1. Cut the baby corns to your desired shape and boil with salt and turmeric powder.
  2. Heat a pan with oil and temper with the cumin seeds.
  3. Add onion and green chillies and fry until transparent.
  4. Add the cooked baby corns and red chilli powder and cook for 2-3 minutes.
  5. Add the tomatoes and capsicum and fry for 2-3 minutes on medium flame.
  6. Top with coriander leaves and drizzle some ghee if you want.
  7. Fry for a minute and transfer to a serving bowl.
  8. Serve as accompaniment for rice or roti.
