
Delicious soup made with beans and vegetables
Ingredients:
1 cup cannellini beans (white beans) (soaked overnight)
3 carrots, peeled and grated
2 medium potatoes, peeled and diced
3 celery stalks, sliced
1 medium onion, sliced
2 garlic cloves, minced
2 teaspoon oil
Salt and pepper to taste
Method:
1. Heat oil in a pan, add garlic, onions and fry until transparent.
2. Add beans, carrots, potatoes, celery, salt and pepper. Cover with water.
3. Cover the pan and let it simmer until all the vegetables and beans are cooked.
Cooking time: 50-55 minutes
