Ingredients:
• 12 – Brinjals
• 1 cup – Coconut
• 3/4 cup – Peanut powder
• 1/4 cup – sesame seeds
• Coriander – 1 tbsp
• Cumin – 1 tbsp
• Maharashtrian goda masala – 4 tbsp
• Tamarind – 1 tsp
• Jaggery – a little
• Chilli powder – 1 tsp
• Salt to taste
• Ginger – Garlic paste
• Asafoetida – a pinch
• Turmeric powder – 1/2 tsp.
Method:
- Remove the stalk and slit the brinjals, wash them in salt water and keep aside.
- Roast coconut, sesame seeds, coriander, cumin seeds together. Grind this mixture with tamarind, jaggery, peanut powder, ginger-garlic paste, salt, chilli powder and goda masala.
- Smear the brinjals with this paste.
- In a pan heat oil and splutter mustard seeds and add asafoetida and turmeric powder.
- Place the brinjals and pour some water.
- Cover and heat on a medium flame for about 15 mins.
- Garnish with coriander leaves. Serve.
