Ingredients:

• eggs – 5 (beat the eggs adding a tbsp of milk, a pinch of salt, and a pinch of Red Chilli powder)
• Spring onions- 1 bunch (finely chopped)
• Onion- 1 medium (finely chopped)
• Capsicum- 1 large (finely chopped without the seeds)
• Ginger-garlic paste- 1 tsp
• Garam masala- 1 tsp
• Green chillies- according to your taste
• Salt
• Oil- 5 tbsp
• A pinch – Turmeric
• Curry leaves – to garnish

Method:

  1. Heat oil in a pan and add finely cut onions and spring onions.
  2. Saute them till the onions are translucent, and then add green chillies and ginger garlic paste.
  3. Add finely cut capsicum, a pinch of turmeric (optional), and salt. Saute them on medium heat, till well done.
  4. Then add the beaten eggs to the pan & stir continuously with a spatula till they are done.
  5. Add garam masala powder & garnish with curry leaves.
