Ingredients:
• 175gm – Chicken fillet
• 225gm – brown Rice
• 50gm – small button Mushrooms
• 100gm – peeled Prawns
• 50gm – peas
• 1 onion, sliced
• 2 Cloves garlic, crushed
• 750ml – Chicken stock, boiling hot
• pepper to taste
• salt to taste
Method:
- Place the chicken on a roasting rack and cook at 240 C/medium-low for 10 minutes. Dice.
- Place the onion, garlic, stock, rice, and mushrooms in a large casserole.
- Cover and cook on at 220 C/medium-low for 30 minutes, or until most of the liquid is absorbed.
- Stir in the prawns, peas, and chicken and cook uncovered on combination 200 C/low for 5 minutes.
- Adjust the seasoning and serve.
