Ingredients:
• Chayote squash 2 (cut into small pieces)
• Onions 1 medium, chopped into small pieces
• Tomato 1 medium ( instead of Tomato you can also use Tomato puree 3 or 4 spoons)
• Potato 1 medium (peeled and cut into cubes)
• Green chillies 1 or 2 (cut very small)
• Curry leaves few
• Ginger Garlic paste 1 tsp
• Turmeric 1/2 tsp
• Salt according to taste
• Chilli powder 1 tsp
• Dhania Jeera powder 1 tsp
• Coconut powder 1 tbsp
• Coriander
• For Seasoning:
• Channa dal 1 tsp
• Urad dal 1 tsp
• Mustard seeds (rai) 1 tsp
• Cumin seeds (jeera) 1 tsp
• Red chilli 1 no
• Oil 4,5 tbsp
Method:
- Take a thick pan and heat the oil. Put all the ingredients for seasoning one by one, starting with dals and seeds after that.
- When mustard seeds splutter, add curry leaves, onions and green chillies. Take care not to burn the seasoning.
- Fry onions for few minutes. Add ginger- garlic paste. When onions turn brown add tomatoes cut into small pieces or tomato puree.
- When tomotoes are fried well, add potato cubes. Fry for 1 or 2 min and put the lid on for some time.
- When potatoes are cooked, add choyote squash and cover.
- Add all powders and cook till done. Add coconut powder before switching off flame.
- Sprinkle fresh coriander on the top for garnish.
- Serve with rotis or hot rice.
