Ingredients:
• 185 g – Butter
• 125 g – Dates
• 60 g – glace Cherries
• 60 g – Walnut pieces
• 1.5 cups – self-rising flour
• 1/2 cup – Sugar
• 2 – eggs
• 1 tsp – vanilla
• 1/2 tsp – bicarbonate of soda
• 2 tbsp – Milk
• Cornflakes – as needed
Method:
- Cream together butter, vanilla and sugar until white and fluffy. Add eggs one at a time, beating well after each addition.
- Sift flour and soda together. Add one-third of flour to creamed mixture and fold in.
- Add 1 tbsp of milk. Add another third of the flour and rest of milk. Then, add rest of flour. Mix well.
- Stir in chopped walnuts, chopped dates and chopped cherries.
- Drop teaspoonful of dough onto the cornflakes and toss lightly.
- Place on greased oven trays.
- Allow room for spreading.
- Bake in moderate oven for 15 minutes or until light golden brown.
