Ingredients:

• 185 g – Butter
• 125 g – Dates
• 60 g – glace Cherries
• 60 g – Walnut pieces
• 1.5 cups – self-rising flour
• 1/2 cup – Sugar
• 2 – eggs
• 1 tsp – vanilla
• 1/2 tsp – bicarbonate of soda
• 2 tbsp – Milk
• Cornflakes – as needed

Method:

  1. Cream together butter, vanilla and sugar until white and fluffy. Add eggs one at a time, beating well after each addition.
  2. Sift flour and soda together. Add one-third of flour to creamed mixture and fold in.
  3. Add 1 tbsp of milk. Add another third of the flour and rest of milk. Then, add rest of flour. Mix well.
  4. Stir in chopped walnuts, chopped dates and chopped cherries.
  5. Drop teaspoonful of dough onto the cornflakes and toss lightly.
  6. Place on greased oven trays.
  7. Allow room for spreading.
  8. Bake in moderate oven for 15 minutes or until light golden brown.
