Ingredients:
• 1 – Drumstick
• 1 – Potato
• 1 – Brinjal
• 1 cup – finely grated Coconut
• 2 – Onions
• 5 to 6 pods – Garlic (pounded)
• 3 to 4 – Red Chillies
• 1/2 tsp – Turmeric powder
• 1 pinch – Jeera powder
• a few Curry leaves
• some mustard and Jeera seeds
• salt to taste
• Oil as required
Method:
- Cut the onions into thin strips.
- Heat a pan and add 4 tbsp of oil. Add the red chillies. Let them darken. Then add mustard seeds and very little jeera seeds and curry leaves.
- Add the onions and fry on medium flame until transparent.
- Add the drumsticks and fry for 2 to 3 minutes.
- Add the brinjal and fry for 2 minutes on low flame.
- Add the potatoes and fry for another 3 minutes.
- Once the potatoes are slightly cooked, add turmeric powder, chilli powder, salt, jeera powder and the pounded garlic.
- Save 1 tbsp of grated coconut and add the rest into the vegetables.
- Mix well and cook for a minute or two.
- Add very little water, close and simmer for some time. Stir occasionally.
- Add the remaining coconut. Mix well and keep on medium flame for a minute.
